Eggplant Stew With Tomatoes

200 ml Olive oil
4 kg Eggplant
80 gr Garlic/chopped
800 gr Tomato whole 5 kg
4 x Seasoning/salt & papper

Pre-preparation:
- Wash and cut eggplant into 1 cm cube
- Peel & chop garlic
- Prepare remaining mise en place

Preparation:
- Heat oil & saute eggplant garlic for 10 minutes
- Remove & keep hot
- Add tomato concasse & seasoning
- Add eggplant & simmer for another 10 minutes
- Adjust seasoning
- Serve n vegetable dish
