Greek Salad


1,2 kg Tomato fresh/quartered
1,2 kg Cucumbers/thin slice
400 gr Onions/thinly sliced
120 gr Olives black canned 5 kg
800 gr Cheese Fresh
8 gr Herbs oregano dried
40 gr garlic/chopped
400 ml Olive oil, 5 lt
8 x Seasoning/salt & paper
200 ml Lemon juice fresh pressed

Pre-Preparation:
- Peel & chopped garlic
- Slice onions & cucumber
- Squeeze lemon for juice
- Wash & cut tomatoes into quartes
- Cut fetta cheese into cubes
- Prepare remaning mise en place

Preparation:
- Place tomatoes, onions, cucumbers & fetta cheese in a mixing bowl
- Mix olive oil, chopped garlic, lemon juice, salt & paper together
- Arrange in a gratin dish or a salad bowl
- Garnish with black olive oil

Eggplant Stew With Tomatoes

200 ml Olive oil
4 kg Eggplant
80 gr Garlic/chopped
800 gr Tomato whole 5 kg
4 x Seasoning/salt & papper

Pre-preparation:
- Wash and cut eggplant into 1 cm cube
- Peel & chop garlic
- Prepare remaining mise en place

Preparation:
- Heat oil & saute eggplant garlic for 10 minutes
- Remove & keep hot
- Add tomato concasse & seasoning
- Add eggplant & simmer for another 10 minutes
- Adjust seasoning
- Serve n vegetable dish
